We cannot deny our love for creamy casseroles. When it’s been a long day and you’re in need of some comfort food, a dish like this is sure to do the trick. If you can’t get a hug from Mom, a casserole like this is the next best thing. Warm and salty, it’s easy to throw together after work and bound to be a hit with everyone who tries it. If you’ve never had the pleasure of trying Shoepeg Casserole, you’re in for a treat!

Shoepeg casserole gets its name from the can of shoepeg corn, but if you’re not able to find it at your local grocery then a can of white corn will also work just fine. For the rest of the ingredient list, you’ll find all the typical casserole culprits, then you’ll top it all off with some crushed crackers and butter (that bit of crunch might be our favorite part!). Pop it in the oven for 45 minutes and then dig into a steamy bowl of comfort.
