Slowcooker Chicken and Dumplings

Chicken and dumplings is a classic comfort food, and making it in a slow cooker is a convenient way to enjoy this hearty dish. Here’s a simple recipe to create a delicious and satisfying slow cooker chicken and dumplings:

Ingredients:

For the Chicken Stew:

  • 4 boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 2 cups water
  • 1 onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour

For the Dumplings:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, cold and cubed
  • 1 cup milk

Instructions:

1. Prepare the Chicken Stew:

a. Place the boneless, skinless chicken breasts in the bottom of your slow cooker.

b. Add the chicken broth, water, chopped onion, sliced carrots, sliced celery, minced garlic, dried thyme, dried rosemary, and a pinch of salt and pepper. Stir to combine.

c. Cover and cook on the low setting for about 6 hours or until the chicken is cooked through and can be easily shredded.

2. Shred the Chicken:

a. Remove the cooked chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
