Ingredients:

For the Cornbread:

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg

For the Dressing:

  • 8 cups of cornbread, crumbled (approximately 1 8×8-inch pan of cornbread)
  • 1/2 cup unsalted butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced green bell pepper
  • 2 cloves garlic, minced
  • 2 cups chicken or turkey broth
  • 2 large eggs, beaten
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

1. Prepare the Cornbread:

a. Preheat your oven to 425°F (220°C).

b. In a mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt for the cornbread.

c. In another bowl, whisk together the buttermilk, vegetable oil, and egg.

d. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

e. Pour the cornbread batter into a greased 8×8-inch baking dish and bake for about 20-25 minutes or until a toothpick inserted in the center comes out clean.

f. Once done, let the cornbread cool, then crumble it into a large mixing bowl.
