5 carrots, peeled and diced
10 stalks of celery, diced
3 onions, peeled and diced
2 green peppers, diced
1 head of cabbage, thinly sliced
1 can of cut green beans
1 can beef broth
2 quarts low sodium tomato juice

1 packet dry onion soup mix
Directions
- Step 1: Prepare all the veggies and combine the entire ingredients in a large pot.

Variations
You can alter the recipe in a variety of ways. Add some meat, such as chicken, turkey, or beef, to make it more full. It won’t be as low in calories, but it’ll still be nutritious and tasty.
