°8 slices of bologna
°3 tablespoons of butter
°1 onion, chopped
°4 cups hot mashed potatoes
°1½ cups grated cheddar cheese
Step by step
Preheat oven 350 degrees F (175 degrees C). Butter 1 1/2 quart baking plate.
Heat a skillet over medium-high heat. Frying bologna slices in hot skillet until golden brown on both sides, for 1 minute per side. Drain on a plate lined with paper towel. Wipe excess fat from pan, reduce heat to medium and stir in butter and onion. Cook and stir until the onion has softened and become translucent, about 5 minutes. Stir the onions into the hot mashed potatoes.
Spread half of the mashed potatoes in the prepared baking dish. Layer with half the fried bologna and sprinkle with half the cheese. Repeat with the remaining ingredients.
Bake uncovered in preheated oven until cheese is bubbly and center is hot, about 30 min.
